Hamburger with sauteed potatoes and pickled red onion

Hamburger with sauteed potatoes and pickled red onion is really cuddly food and can really be recommended. Homemade burgers are wonderfully much better than ready-made ones.

The burgers:

600 g chop dough

1/2 dl cream

4 drops of tabasco

1 ss Worcestershiresaus

1 ts salt

1/2 ts pepper

Sliced cheese, whether blue-skinned, cheddar or any other cheese you like

Mix everything well in a bowl. Form fine burgers and fry them in butter in a frying pan or on the grill, until they have a nice tan on both sides, but not so long that they become dry. Add cheese and cover with lid at the end of cooking time.

Sauteed potatoes:

8 medium-sized potatoes, peeled and cut into cubes of 2 x 2 cm

4 tbsp olive oil

20 g butter

2 handfuls chopped parsley leaves

2 finely chopped shallots

Salt and pepper

Boil the potatoes in lightly salted water for 1 minute, before pouring off the water and letting them dry a little.
Pour the olive oil into a medium-hot frying pan and add the potatoes. Let the potatoes enjoy themselves on medium heat until golden brown and tender. Turn them over so they get nice color on all sides. Season with salt and pepper, reduce heat and add butter, parsley and shallots and stir well. Let the butter melt and glaze the potatoes and shallots.

Burger bread:

You can buy ready-made burger bread, or easily make yourself.

4 dl milk

3 dl water

1 pk yeast

6 tablespoons olive oil

1 kg of wheat flour

1,5 ts salt

2 tablespoons sugar

Heat milk and water to 37 degrees. Crumble the yeast and stir it into the liquid. Band olive oil, flour, salt and sugar. Mix in the milk mixture and knead everything well together, preferably with a food processor. Adjust ev. with more flour or more milk. Let the dough rise for 1 hour, before dividing it into 16 equal parts and forming fine, round burger bread, which you press a little flat and place on a baking tray, covered with baking paper.

Let the breads rise under a cloth for 30 minutes, before you brush them with milk, sprinkle on sesame seeds and bake them at 200 degrees, a little far down in the oven for about 15 minutes and have a nice color both above and below. Cool on a rack. A good tip for burgers that are to be frozen is to bake them for 5 min. shorter and fry them ready, when used.

Pickled red onion:

Pickled red onion you can also buy ready-made, or make yourself.

4 red onions, peeled and divided into 4

1 lemon, only the juice

2 tablespoons sugar

Cook all the ingredients, on a low temperature in a saucepan, until the onion is tender and has a nice color.

 

Pickled red onion   Dressing for salad

Hamburgerdressing:

2 tbsp mayonnaise

100 g creme fraiche

1 ss ketsjup

2 ts HP sauce

1 tbsp mustard

Salt and pepper

Stir everything together, season with salt and pepper and set cold until ready to use.

 

Mounting:

Burgerbrød

Lettuce leaves

Dressing

Burger w/melted cheese

Pickled red onion

Sliced cucumber

Heat the loaves a little in the oven or on the grill. Place the lower part of the bread on a plate. Put on lettuce leaves, dressing, burger with cheese, red onion, cucumber and the upper part of the bread. Top up with the potatoes and serve.
