Moose pudding

This meat pudding is juicy and with a good taste of elk. It tastes good with old-fashioned, brown sauce and it can also be made from other types of game or cattle.

1 dl cream

1 finely chopped onion

500 g minced meat of elk

1 beaten egg

1/2 dl grill

1 ts salt

1 ts pepper

2 pk sliced bacon

Mix grill flour and cream in a bowl and let it swell for 5 minutes. Knead together all the ingredients for the meat pudding except the bacon.

Place the bacon slices with a little overlap in a fireproof loaf pan. Let the ends hang over the edge. Distribute the dough in the mold. Wrap over the bacon ends and fry the meat pudding in a water bath, in the middle of the oven at 150 degrees for approx. 40 minutes.

Serve the meat pudding with brown sauce, potatoes, fried mushrooms and optional vegetables, e.g. cauliflower, Brussels sprouts, sauerkraut, red cabbage or beans.
