Salmon with apple sauce is not the most common combination, but it tastes very good together.
The applesauce:
1 onion, finely chopped
2 apples, peeled and in small cubes
100 g butter
6 dl apple juice
2 tablespoons of brandy
1 bay leaf
1 tablespoon chicken fund
Light cornstarch cones
Salt and pepper
Saute onions and apples in the butter until the onion is shiny, butnot brown. Add the apple juice, brandy and bay leaf and let it boil for 30 min. Strain the onions and apples, pour the sauce back into the pan and season with pepper and chicken funds, until the sauce is suitably salty. Bring to a boil and add cornstarch chips, until the sauce is suitably thick.
The carrots:
1 carrot per person
Lemon juice
Sugar
Grate the carrots on graters and season with freshly squeezed lemon juice and sugar.
Salmon:
180 – 200 g salmon per person
Butter
Salt and pepper
Put the salmon in a greased, baking dish, season with salt and pepper and put the mold in the oven at 200 degrees for 25-30 minutes.
If you want to take the salmon in sous vide, you can season it and vacuum it with a little butter or oil, before putting it in sous viden at 45 degrees for 25 minutes.
