Salmon on stick in pita with Greek salad and tzatziki

Salmon on a stick in pita is an easy dish that can be cooked either on the grill or in the frying pan. It can be made quickly and easily with ready-made pita and tzatziki, or with a little more effort, if you choose to make tzatziki and pita bread yourself. It is of course best with homemade pita bread, and you can find the recipe for them here . I usually make a large portion and half-fry the ones I'm not going to use right away to freeze them until later.

Tzatziki:

3 dl yogurt natural, Greek type

1/2 gherkin, grated coarsely, added a little salt and drained for 15 min. in colander

Mix and season with finely chopped mint, garlic, pepper and lemon. Tzatziki only gets better from being left in the fridge for a few hours.

Salads:

1 small head finely shredded lettuce

10 mini tomatoes divided into two or four

1 glass of feta cheese incl. the marinade

1/2 cucumber into small cubes

1 small red onion in thin strips

1 dl sliced black olives

Mix the ingredients and set aside for a few minutes, so the marinade can add flavor to the rest of the ingredients.

Salmon:

800 g salmon

3 tablespoons tzatziki spices

3 tablespoons lemon juice

6 tbsp oil

1/2 ts pepper

Divide the salmon fillet into long strips of approx. 3 x 3 cm and thread them on barbecue skewers. If you use wooden skewers, it is important to leave them in water for a few hours first, if you are going to use them on the grill. Otherwise, they quickly catch fire. Blend the rest of the ingredients well and spread the salmon on all sides. Salmon on a stick is grilled or fried quickly on all sides and served with pita, Greek salad and tzatziki.
