Minas carrot soup

Mina's carrot soup is lovely as a starter or as a lunch dish, with some bread. The carrots make the soup a little sweet, so it tastes delicious with a little bacon on it.

800 g diced carrots

4 shallots, finely chopped

2 garlic cloves, finely chopped

1/2 red chili, finely chopped

2 tablespoons butter for frying

6 dl vegetable power, ev. water with stock or bouillon cubes

2 cans of sour cream

The juice of 1 lime

Salt and pepper

Some fresh coriander

1 pk bacon

Place the bacon on baking paper and place it in the oven at 200 degrees, until it is properly browned. Crush it with your hands and set aside until it is to be served.

Saute the vegetables in butter until the onion is glossy, approx. 5 minutes. Add stock and bring to a boil. Let it simmer under the lid until the carrots are soft, approx. 20 minutes. Blend the soup until smooth with a stick blender. Stir in the creme fraiche and season with lime juice, salt and pepper. Serve Mina's carrot soup with a sprinkle of bacon and garnish with some coriander.
