Poke bowl is a dish that comes from Hawaii. It is most often served with rice at the bottom and diced raw fish, but I really like the concept and here I have made a variation with chicken breast. The recipe is for 1 person, so it's easy to multiply, so you can serve the poke bowl to as many as you like.
1 chicken breast person, salted, peppered and browned in a little butter
1/2 onion in strips, browned in a little butter
2 handfuls spinach, steamed in a mixture of butter, water and chicken stock
1/2 spring onion in strips
1/2 red pepper in strips
50 g sliced mushroom (or aroma mushrooms) and browned in a little butter
Super rice, made according to the instructions on the package, but with double the amount of water + 1 teaspoon of chicken stock
1 tablespoon sesame seeds, roasted in a dry pan
Poke sauce (Kikkoman has a ready-made sauce) - quantity as desired
Place super rice in the bottom of a bowl. Dand the other ingredients around. Sprinkle with sesame seeds. Serve poke bowl with poke sauce, which is poured over, before everything is mixed.
