Green sauce

Salsa Verde means green sauce in Spanish. You will find variations of green sauce in Spain, Italy, France, Germany and Mexico. This salsa goes very well with barbecue, lamb and fish and is both healthy and good.

1 fistful of leaf parsley
1 fistful of basil or mint leaves
1 finely chopped shallot
2 cloves finely chopped garlic
1 teaspoon finely chopped chili (or less, if you don't like such spicy food)
1 tbsp capers
3 tablespoons white wine vinegar
1 dl good olive oil

Everything is run in a food processor. Season with salt and pepper. The salsa can be made in advance and set cold until it is to be used.
