Breakfast omelet in one variation or another is often part of the weekend fun with us. I like to enjoy a long and enjoyable breakfast when I have time off. Today we have made a single omelet and it tastes extra good, along with homemade bread.
I start by frying a packet of bacon. I use dry salted bacon. It's a bit more expensive, but you don't have to see the bacon shrink to almost nothing. Once the bacon is cooked, I cut it into small pieces. 4 eggs, 4 tablespoons cream a little sprinkle of salt and pepper are lightly whipped together. Pour the mixture into a frying pan with melted butter. Let the mixture set slightly, stirring gently with a spatula. When the omelet is semi-rigid, finely shredded leeks, bacon and a few slices of cheese are added.
