Fajitanachos are a real treat and this variant with chicken is one of my son's specialties.
3 chicken breasts in cubes
2 ts salt
2 teaspoons chili powder
1 ts pepper
2 teaspoons garlic powder
2 teaspoons cumin
3 tbsp oil
1 onion in strips
4 cloves finely chopped garlic
3 shredded peppers
The juice of 1 lime
1 pose tortillachips
1 pack of shredded pepper Jack cheese
2 dl reven vellagret cheddarost
Put chicken breast in a bowl and add salt, pepper, chili powder, garlic powder and cumin.
Fry the chicken in 2 tablespoons oil until it is no longer pink. Put it in a bowl and fry the onion for a few minutes in 1 tablespoon oil in the same pan. Add the garlic and paprika and let it cook for a few minutes, before mixing it with the chicken and adding lime juice.
Place half of the tortilla chips in an ovenproof dish. Add half of the chicken mixture and top it with pepper Jack and cheddar cheese. Repeat with the rest of the ingredients.
Fajitanachos are baked at 180 degrees until the cheese has melted. It takes approx. 15 minutes. Serve with sour cream, salsa and guacamole.
