Amaretti al limone is soft and fragrant biscuits from Italy. They have a delicious mild lemon flavor and it's hard to eat just one.
The recipe gives approx. 50 amaretti al limone
280 g of type 00
20 g potato flour
120 g melis
100 g butter
1 egg
1 organic lemon (peel + juice)
8 g baking powder
1 pinch of salt
A little sugar to roll in
A little icing sugar to roll in
Icing sugar to sprinkle over after frying
Approach:
Wash the lemon well before tearing the peel. Then squeeze the juice and set aside.
Let the butter soften at room temperature. If you are in a hurry, you can put it in the microwave for a few seconds. Whisk butter and icing sugar until white and fluffy. Add the egg and salt and continue whipping, then add lemon zest and lemon juice.
Add a little and a little tipo 00, potato flour and baking powder by sifting it through a sieve. Stir together into a smooth dough and shape it into a loaf of bread. Wrap the dough in foil and it to rest in the refrigerator for an hour.
Take small pieces of dough and form balls the size of walnuts with your hands. Put some sugar on one plate and some icing sugar on another plate. Before each ball, first in the sugar and then in the icing sugar (they must be perfectly coated). Place the cookies on two parchment paper-lined baking sheets, making sure to keep some distance between them.
Let the cookie balls rest in the fridge half an hour before baking. Bake one baking tray at a time in a preheated oven at 180 degrees for 12-15 minutes (they should not turn brown).
Remove amaretti al limone from the oven and let them cool completely before sprinkling them with more icing sugar and serving.
