BBQ salmon is easy and good. You can either grill it, or put it in a refractory form and put it in the oven. It is served with a cold sauce, but the other accessories can be varied and made as simple or complicated as you wish.
Salmon:
200 g salmon per person
BBQ sauce of your choice, my favorite is Sweet Baby Ray's Hickory & Brown Sugar
2 tablespoons neutral oil
Grease an ovenproof dish with oil and add the salmon in portioned pieces. Spread 1-2 tablespoons of BBQ sauce on the top of each piece of salmon and leave it cold to marinate for an hour (if you have time for it). Bake the salmon in the oven at 200 degrees for 10 minutes. If you use a roasting thermometer, it is perfect when the core temperature is 50 degrees.
Sauce:
1 can of crème fraîche or sour cream
1/2 tbsp BBQ sauce
Salt and pepper
Stir the ingredients together, season with salt and pepper and if you want more BBQ sauce. Keep cold until serving.
