Homemade sausage with red cabbage tastes absolutely fantastic, but you can use ready-made sausage as well, but then I recommend the coarse variety. We have made Christmas sausage ourselves and it tastes good for more than Christmas dinner. This time I've made old-fashioned brown sauce, oven-baked potatoes and red cabbage in the oven. This red cabbage is a favorite here, with a lot of flavor and some chewing resistance in the cabbage itself.

1 red cabbage, finely shredded
3 red apples, peeled and cut into cubes
5 dl red wine
2 dl red wine vinegar
4 dl orange juice
1 dl blackcurrant juice
2 dl raisins
2 dl dried figs in small cubes
1 star anise
1 teaspoon allspice
1 cinnamon stick
100 g ribbefett
5 dl milling power or water and chicken stock
1 dl demerasukker
Place red cabbage, apple, raisins, figs, wine, vinegar, juice and spices in a bowl for marinating. Leave it for at least an hour, but preferably overnight.
Fry finely chopped onion in rib fat, add the red cabbage mixture and the stock. Let it simmer until the cabbage is done cooking, about 2 hours. Season with salt, pepper and sugar.
Old Fashioned Brown Sauce:
2 tablespoons butter
2 ss mel
4-5 dl power / broth or water and fund
Salt and pepper
Brown the butter until it is nut brown. Add the flour and stir evenly all the time. Use medium heat and cook until it is suitably brown.
Remove the pan from the heat and add half the heat. Stir well so that there are no lumps. Add the rest of the power when the sauce is smooth. Cook for 10 minutes and add in other flavorings, such as. onion.
