Hummus is a delicious puree, which is made from chickpeas. It is widely used in the Arab countries, either as an accompaniment to dinner instead of potatoes, or as a dip for vegetables or bread. You can use it as part of a tapas meal, or meze, as they call it in the eastern and southern areas around the Mediterranean.
1 box of chickpeas, rinse and dry
1/2 teaspoon baking powder
1/2 cup lemon juice
2 cloves garlic
1/2 ts salt
1 dl tahini
1/2 teaspoon cumin
1 tablespoon extra virgin olive oil
Everything is run in a blender or with a hand mixer to a smooth mass. Garnish with a little olive oil and a sprinkle of sumac or paprika.
