Christmas red cabbage

Christmas red cabbage is specially adapted to Christmas meals, with a hint of Christmas spices. It's great for ribs, duck, turkey, and other dishes you use red cabbage for at Christmas. Christmas red cabbage can be made well before it is to be used and frozen.

1.5 kg of red cabbage

1 tsp ground allspice

1 bit cinnamon bark

2 star anise

1 dl applesauce

1 dl apple cider vinegar

4 tablespoons sugar

2 tablespoons of currant jelly

2 green apples

Salt and pepper

A little rib fat, if possible. duck fat

 

Divide the red cabbage into fine strips and put everything, except the fat, in a saucepan. Boil for 2 hours, until the cabbage is properly tender. Stir in the fat and season with salt and pepper.
