There is no need to buy bag soup, when it is so easy to make yourself. It gets much better too.
2 tablespoons butter
1 finely chopped onion
1 cauliflower
½ ltr. milk
½ ltr. cream
4 tablespoons vegetable stock
Salt and pepper
Some sprigs of thyme
Some bacon slices
Cut nice bouquets of cauliflower and set them aside. Divide the rest of the cauliflower into small cubes and fry these, together with the onion in butter, until the onion is shiny.
Pour on milk, cream, stock and add finely chopped thyme. Let it cook until the cauliflower is tender. Run the mixture to a smooth mass with a hand mixer and strain it through a sieve so that it is without lumps. Add the cauliflower bouquets, season with salt and pepper and cook until just tender, but still chewy.
Garnish with bacon slices and a sprig of thyme.
Serve with good bread.
