Salmon with pesto, parmesan and gremolata potatoes

Salmon with pesto tastes extra delicious in the summer, I think.


The salmon can either be taken in the frying pan, or placed in a grill tray on the grill.

Calculate 180 - 220 g salmon per person. Grease it with pesto, sprinkle over the grated parmesan and fry it in a frying pan with a lid, or on the ground on the grill with a lid. Make sure it does not get dry.


1 pot parsley

2 finely chopped cloves of garlic

1 small glass of capers

2 finely shredded spring onions

1 dl lemon oil

2 dl mangoed thick

1 dl olive oil

1 kg potatoes, preferably boiled

Stir well and stand and rest at room temperature while you cook the potatoes. Divide the potatoes into smaller pieces (unless they have boiled into pieces by themselves). Mix in the gremolata and serve with optional vegetables. I have fried delicious sun-ripened tomatoes.
