Red cabbage in the oven

This red cabbage tastes a little different than the one we usually use for Christmas dinner and the cabbage still has some chewing resistance. I think it tastes extra good with duck, turkey and game.

1 vanilla bean

1 finely chopped red cabbage

3 apples in cubes

150 raspberry jam

100 g fig jam

2 dl red wine

1 dl good balsamic vinegar

1/2 ts salt

Divide the vanilla bean, scrape out the seeds and mix all the ingredients in a fireproof bowl. Cover the mold with aluminum foil and put it in the oven for approx. 1 hour. Taste if more salt is needed or possibly. a little sugar.
