Šopska salad is a delicious salad, served in Bulgaria, Turkey, the Caucasus, Russia and the Balkans. They use a goat cheese called siren, but I haven't found it in any of the stores I shop in. I have used Myrdal well-made white goat cheese, which gives the same result.
300 g diced sun-ripened tomatoes
200 g cubed snake cucumber
200 g of diced green peppers
1 onion in thin rings
1 handful of sliced olives
200 g white goat's cheese
1 fresh chilli, finely chopped
2 tablespoons white wine vinegar
1 dl olive oil
Finely chopped parsley leaves
Place tomatoes, cucumbers, peppers, onions and olives over a dish. Whisk together chili, vinegar, oil and parsley and pour over the salad. Grate the cheese and serve.
