Waffles are excellent for dessert and can be varied according to taste and seasons.
Waffles:
8 dl mel
2 dl sugar
3 teaspoons baking powder
4 teaspoons cardamom
6 dl milk
2 dl cultured milk
8 egg
100 g butter
4 teaspoons vanilla sugar
Mix the dry ingredients in a bowl. Mix in cultured milk, milk, eggs and melted butter. Stir well so you do not get lumps. Let the batter swell for at least 20 minutes.
Heat the waffle iron (I am a lucky owner of a Moods of Norway iron) and grease it with a little butter and fry delicious waffles.
Ice cream:
2 good quality vanilla sticks (eg Tahiti)
5 dl milk
3 dl cream
6 egg yolks
200 g sugar.
Divide the vanilla sticks lengthwise and scrape out the seeds. Slowly boil milk and cream with the vanilla sticks including seeds. Set the pan aside and let it soak for 20 minutes under the lid. Beat egg yolks and sugar until eggy. Add the milk and vanilla mixture to the egg mixture while stirring. Return this mixture to the pan and heat to 80 degrees while stirring until it thickens. Strain the mixture into a bowl and cool. Run in ice cream machine until done. If you do not have an ice machine, you can put it in the freezer in a regular bowl and stir every half hour, until it is stiff. The result is almost as good as with a machine.
Serve the waffles with vanilla ice cream, fresh berries to taste, I have used strawberries, raspberries and blueberries. Garnish with mint leaves.
