Kokostonkatsu - a delicious Japanese dish

Tonkatsu is a lovely Japanese dish. I have used pork fillet, but you can also use pork chops.


Pork fillet:

2 egg

2 tablespoons olive oil

800 g pork fillet

Salt and pepper

100 g rismel

200 g coconut flour

Pisk sammen egg med olivenolje. Del svinefilet i tommetykke skiver og bank skivene flate. Krydre dem med salt og pepper, vend dem i rismel, så i eggeblandingen og tilslutt i kokosmel. Stek dem i en panne med olje, ca. 2-3 minutter på hver side, til de får lekker gyllen farge.
 

Cabbage salad:

1 cold

1 grapefruit

Salt

Cut the cabbage head finely. Cut the top and bottom of the grapefruit and cut off the peel. Cut out the fillets and place them in a bowl. Squeeze the juice out of the "hull". Massage the cabbage with a little salt and the grapefruit juice. Season with Mirin and salt. Turn the grapefruit fillets into the cabbage. Sprinkle with sesame seeds.

Tonkatsusaus:

40 g tomato puree

2 ss worcestersaus

1 tbsp soy sauce

1 ss mirin

1 tablespoon sugar

1 tbsp dijon mustard

1 clove finely chopped garlic

Mix all the ingredients. Taste if it must have more soy sauce or Mirin.

Serving: Serve with rice at the bottom, then the pork fillets. Pour sauce over and serve the salad next to it.
