Sellerirotsuppe

Celery root soup is lovely as a starter or for lunch, together with good bread. The mixture of apple and bacon looks delicious, while also going perfectly with the soup.

600 g sellerirot i terninger

1 finely diced onion

2 ss smør

1 ltr. melk 

3 ss grønnsaksfond

Salt and pepper

1 neve finhakket gressløk

1 syrlig eple i små terninger

150 g bacon i små terninger


Clean, peel and dice 600 g celery root. Finely chop an onion and fry everything in 2 tablespoons butter. Add milk until just covered and 3 tablespoons vegetable stock. Let it simmer until the vegetables are completely tender.

Run the soup smooth and smooth with a hand mixer. Add more milk, so the soup gets a nice consistency. Season with salt and pepper. Add a handful of finely chopped chives before serving.


Cut the apple and bacon into small cubes, fry the bacon until crispy in a frying pan and add the apple pieces towards the end. Divide the soup into deep plates, top with the apple and bacon mixture and garnish with chives.
