Yellow fish curry

Yellow fish curry is served in the southeast corner of Asia. I have used salmon, but can replace the salmon with other solid fish species or with chicken or pork.

This recipe is suitable for 4 people:

600 gram laksefilet

2 ss olje

1 glass gul currypasta

2 løk i strimler

2 røde paprika i strimler

1 pose babyspinat

8 dl coconut milk

1 ts sukker

2 ss fiskefond

2 ts fishsauce

Fry the onion softly in oil on medium-low heat in a wok or large frying pan.

Add the curry paste and stir until it smells good, about a minute, before adding funds, fishsauce, coconut milk and sugar. Add the diced salmon, spinach and peppers. Stir and cover. Let it steep for a few minutes, until the fish is cooked through.

Serve yellow fish curry with rice or noodles.
