Couscous is North and East Africa's answer to rice, and is grits made from durum wheat semolina. It is often used as a side dish for stews, tagines and other dinner dishes. You can cook it according to the instructions on the package and serve, but I think it tastes good to make a little extra out of it. The recipe is suitable for 4 people.

Couscous for 4 people, made according to the instructions on the package

50 g pine nuts

50 g pistachios

2 spring onions finely chopped

1/2 cucumber, diced

50 g raisins

1 handful fresh mint, finely chopped

1 handful fresh coriander, finely chopped

Mix everything with the couscous, garnish with fresh coriander leaves and serve. If you want to serve couscous more like a salad, you can make a dressing of olive oil and lemon and pour over.
