Kachumbari is a fresh salad, used in East Africa. Kachumbari is a Swahili word, which is derived from the Indian word for cucumber. This salad is used as a side dish for dinner.
2 diced tomatoes
1 cucumber in cubes
1 diced red onion
1-2 green chilies, finely chopped
Mix together all the ingredients in a bowl.
Dressing:
1 garlic clove finely chopped
1 dl olive oil
2 ss mangoed thick
1 tablespoon honey
2 tablespoons finely chopped coriander
Juice from 1 lime
Salt and pepper
Mix all the ingredients together and season with salt and pepper.
