Mammas minestronesuppe

Mom's minestrone soup is an Italian soup, which tastes much better when you make it yourself, than when you buy minestrone soup in a bag. In addition, it is made from ingredients, which you may have available in the refrigerator.

150 g diced bacon

1 onion, finely chopped

3 cloves garlic, finely chopped

2 carrots, in small cubes

2 potatoes, in small cubes

1/2 squash, diced

1 stalk of celery sticks, in must dice

1 l chicken stock, possibly water and chicken stock or stock cubes

400 g chopped canned tomatoes, preferably Mutti

1 can of lima beans or other white beans

1 meat sausage with flavor, e.g. ram onion sausage from butcher Eide in thin slices

2 dl snarkokt macaroni

1 handful fresh parsley, finely chopped

Salt and pepper

Brown the bacon, for a few minutes before adding onions, garlic, potatoes, carrots, squash and celery sticks and letting it sauté for a few minutes. Add the tomatoes and stock and simmer the soup for 20 minutes, while cooking the macaroni al dente, as instructed on the package. Add the beans and sausage to the soup, when 10 min remains. of the cooking time and season with salt and pepper. Pour the water off the macaroni and add it just before serving.

Serve mom's minestrone soup hot with a little grated Parmesan and good bread as an accompaniment, such as focaccia, which you can find recipe for HERE.
