Port wine herring is a tasty addition to Christmas breakfasts and is fun to make. I make at least one new kind of herring every year, but port wine herring is a regular. Remember to calculate time for both dilution and for the herring and onions to stand and attract the good flavors.
6 seasoned herring fillets
2 red onions
1 teaspoon dried sage
1.75 dl white wine vinegar
0.25 dl balsamic vinegar
1.5 dl sugar
3 tbsp rapeseed oil
1 dl port wine
Water out the herring fillets as instructed on the package.
Mix the rest of the ingredients and season. Rinse, dry and divide the herring fillets into suitable fork pieces and mix them into the port wine sheet. Leave port wine herring cold for a couple of days before serving it.
