Reindeer fillet with port sauce and grilled vegetables is delicious both in summer and winter. This dish, served with mashed potatoes, can easily be served in company.
Sauce:
2 onions, finely chopped
2 carrots in small cubes
1 tablespoon butter
4 dl port wine
2 tablespoons game fund
Maisennajevner
50 g butter
Fry onion and carrot in 1 tablespoon butter. Add port wine and let it boil a little. Add stock and stir in the cornstarch until it thickens. Strain off the vegetables, season with salt and pepper and add 50 g butter, so it is extra shiny when serving. Do not let the sauce boil after you have added the butter.
The vegetables:
8 mini carrots
1-2 parsley roots, peeled and divided into sticks
12 shallots, divided into 2
All the vegetables are mixed with a little neutral oil and grilled in a grill wok for a few minutes, until the onion is tender. Add a little salt and pepper before serving.
The reindeer fillet is salted and peppered and browned quickly in the grill and then placed higher up in the grill for approx. 5 minutes. Make sure it is still red / pink.
