Cured food with homemade potato salad is delicious summer food. Today we will have cured meat for dinner and I will make a salad, with ingredients from my own garden, scrambled eggs and my potato salad. I always make the potato salad myself. It's not a lot of work and it tastes much better than bought ready-made.
1 box of sour cream
1 bag of mayonnaise
4 ss agurkmiks
2 finely shredded spring onions
1 kg boiled potatoes in cubes
salt and pepper
Mix sour cream, mayonnaise, cucumber mix and spring onion. Season with salt and pepper. Add the potatoes, they can be hot.
In addition, I make scrambled eggs and I also make a salad of ingredients from the garden in addition to ingredients from the cold room.

6 tablespoons whipped cream
2 tablespoons butter
Freshly ground black pepper
Chives, finely chopped
Whisk the eggs together with whipped cream, chives, salt and freshly ground pepper. Melt the butter in the frying pan and pour in the scrambled eggs. Let it set on low heat while stirring gently towards the bottom of the pan. The scrambled eggs should be velvety soft in consistency, so remove them before they settle completely.
Place the cured meats on a platter. I have used red wine sausage, morr, mutton sausage, two different long-ripened bacon hams and dry-salted bacon. I cut up half a melon too, because we think it's good with the slightly sweet next to the salty cured meats.
Serve the cured meat with flatbread, salad, scrambled eggs and potato salad.
