Smoked salmon with Skagen salad

This starter can be made almost ready in advance, so it is easy to serve to many guests. This portion is for 8 and we think it tastes lovely.

400 g smoked salmon

160 g cleaned, chopped shrimp

160 g chopped crayfish tails

3 dl fresh creams

2 tbsp mayonnaise

2 tablespoons finely chopped chives

2 tablespoons chopped dill

2 tsp mustard

2 teaspoons lemon juice

4 slices of country bread

Mix together shrimp, crayfish tails, sour cream, mayonnaise, chives, dill, mustard and lemon juice.

Cut off the crust on the country bread slices and divide them into small croutons. Shake in a hot pan with a little oil. Place them on a paper towel to extract excess oil.

Spread the salmon slices on plates, place on the Skagen salad and garnish with some trout or salmon roe, bread croutons and dill.
