Pikekyss are small meringue tops, which are easy and cheap to make. They just need some time in the oven, at a low temperature. Pikekiss can be eaten alone, as an accessory to dessert or used as a cake decoration. Pikekyss or meringue (meringue, in French) is named after the Swiss town of Meyringen.
6 romtempererte eggehviter
450 g sukker
1/2 ts salt
2 ts sitronsaft
Food coloring(s) if you wish
Rub the whipping bowl with the salt and lemon. Add the egg whites and 1/3 of the sugar and beat until fluffy. Add the rest of the sugar little by little.
Pour the meringue into a piping bag and pipe small peaks onto baking paper. Place the girl kisses in the oven at 60-70 degrees for approx. 2 hours for drying.
