Cucumber salad with Asian twist

This cucumber salad, with Asian flavor, goes perfectly with many Asian fish dishes. It is nice to use when you have guests, since you can make it ready several hours in advance and only put it on the table when the guests arrive.

2 dl water

1/2 cup vinegar

2 tbsp soy sauce

1 teaspoon grated ginger

1 tablespoon sugar

1/2 ts pepper

Mix water, vinegar, soy sauce, ginger, sugar and pepper. Cut the cucumber into thin slices. I use a cheese grater, which makes it easy and the slices are nice and evenly thick. Put the cucumber in the vinegar mixture and leave it to soak in the fridge for at least 1 hour.
