This recipe is inspired by a French recipe called lobster thermidor. It is suitable for 4 people as an appetizer or 2 people as a main course.
2 hummer
1 shallot, finely chopped
1 tablespoon brandy or brandy
1.5 dl cream
1 tablespoon butter
2 egg yolks
2 dl fox cheese, preferably gruyère or another cheese with a lot of flavor
2 ss Creme Fraiche
1/2 tsp cayenne pepper
1 teaspoon mustard
Lemon or lime
Salt and pepper
Divide the lobster in half. Remove the pope and intestine. If you buy lobster on Meny, they will help you with this. Remove the meat from the body and claws and divide it into cubes, before putting it back in the shell.
Fry the onion in the butter until it is shiny. Add brandy, sour cream and cream and bring to the boil. When it almost boils, stir in the egg yolks quickly. After this, it must not boil. Stir in 1 dl of the cheese. Season with salt, pepper and mustard.
Put the lobsters in an ovenproof dish and spread the sauce over. Sprinkle on the rest of the cheese. Gratinate in the middle of the oven at 220 degrees until the cheese is golden.
Served with a lemon zest or lime and fresh loaf.
