Salmon and noodles the Thai way

This is a healthy dish, which is easy to make for many. The recipe is suitable for 4-6 people.

2 onions, in strips

3 cloves garlic, finely chopped

1 pk sliced shitake mushrooms

1 carrot in strips

1 cm finely chopped ginger

1 teaspoon malt lemongrass

1 ss fishsauce

2 teaspoons sesame oil

1 box of tomatoes (preferably Mutti)

2 tsp soy sauce

1 tablespoon chicken stock

2 tbsp sweet chili sauce

6 dl water

1/2 finely chopped chili

400 g diced salmon or trout

1/2 pk noodles

2 tablespoons coriander from a tube or 1 fist fresh, finely chopped

1/2 spring onion in strips

Fry onion and garlic in oil. Add mushrooms, carrots, ginger, lemongrass, fish sauce, sesame oil, tomatoes, fondant, chili, chili sauce, coriander, soy sauce and water. Let it simmer for 10 min. Add salmon and spring onion and let it steep for 5 min. Served with noodles and good bread, eg baguettes
