Easy chicken soup with curry is both healthy and tastes good.
1 liter good chicken stock
1 shredded onion
4 chicken fillets in cubes
1 clove finely chopped garlic
1 ts kajennepepper
2 ts curry
1 teaspoon grated ginger
1 pk. grated carrot / cabbage
1/2 ts salt
1/2 ts pepper
Ev. coconut milk or cream.
Bring chicken stock to a boil and add chicken fillets and onions. Add garlic, cayenne pepper, curry and ginger. Let it cook for approx. 10 minutes. Add carrot / cabbage. Let it simmer for a few more minutes. Season with salt and pepper. If you want a more creamy soup, you can replace some of the power with coconut milk or cream.
