Pandanis

Panda ice cream is made from pandan leaves, which grow in Southeast Asia. The taste can be reminiscent of vanilla and you get a nice green color on the ice cream. You can buy pandan leaves in Asian shops. Many of them sell ready-made pandan drops in small bottles. Then you don't have to make it yourself and can taste the finished mixture with the drops.

5 dl melk

12 pandanblader

3 dl fløte

6 eggeplommer

200 g sukker

Wash the pandan leaves and cut them into 1 cm strips. Process the pandan leaves in a food processor together with the milk and let the mixture cool overnight. Slowly boil the milk mixture and cream. Take the pot aside and let it steep for 20 minutes under the lid. Beat the egg yolks and sugar to make an eggnog. Add the milk mixture to the egg mixture while stirring. Pour the mixture back into the pot and heat to 80 degrees while stirring until it thickens, before straining the mixture into a bowl and cooling. Process in an ice cream machine until it is ready. If you don't have an ice machine, you can put it in the freezer in a regular bowl and stir every half hour, until it is stiff. The result is almost as good as with a machine.

Serve pandan ice cream with something crunchy, e.g. a biscuit and garnish with fresh herbs.
