The son in the house satay chicken is a wonderfully delicious dish with grilled chicken, peanut sauce and a lovely mango salad. This recipe is suitable for 4 people.
700 g kyllingfilet
Marinade:
1 dl ketjap manis (søt soyasaus)
1 ss sambal oelek (chilipasta)
2 ss rapsolje
2 ss sesamolje
1 ss ingefær fra glass, ev. revet fersk ingefær
2 fedd hvitløk, finhakket
1 neve frisk koriander, finhakket
Mix the ingredients for the marinade in a bowl. Cut the chicken fillets into thin slices lengthwise, and place them in the marinade for min. 30 min. but preferably overnight. Thread the chicken fillets onto skewers in a zigzag pattern, preferably using disposable gloves. NB! Take care of the marinade. Fry the chicken satays on the grill or in a frying pan, until they have a nice crust and are cooked through.
I've used metal skewers, but if you use wooden skewers, it's important to soak them in water for a few hours so they don't catch fire during the grilling.
Peanut Sauce:
1 boks kokosmelk
200 g grovt peanøttsmør
The rest of the marinade
Boil all the ingredients and let it simmer for a few minutes. Add a little water if the sauce becomes too thick.
Salads:
1 mango i terninger
2 avocado i terninger
1 liten pose cashewnøtter, ristet
3 vårløk, finstrimlet
1/2 rød chili, finhakket
1 ts ingefær fra glass
1 beger granateple, ev. frøene fra 1/2 granateple
1/2 lime, kun saften
1 neve frisk koriander, finstrimlet
Mix together chilli, ginger and lime to make a dressing and stir it together with the rest of the ingredients for the salad.
Feel free to serve the son in the house satay chicken with rice.
