Syria

Syrian food contains a lot of eggplant, squash, garlic, meat (mostly from lamb and sheep), sesame seeds, rice, chickpeas, fava beans, lentils, cabbage, cauliflower, vine leaves, pickled turnips, cucumbers, tomatoes, olive oil, lemon juice, mint, pistachios, honey and fruit.
Syria often serves mezze, which is Syrian tapas, along with Arabic bread before the main course. The dessert usually consists of coffee, together with sweet confectionery or fruit.
Many of the Syrian recipes date from at least the 13th century.
