Taifiskegryte

Thai fish stew both tastes good and is healthy. I have used catfish, salmon and Argentine wild prawns, but you can use other types of fish, if you like and replace shrimp with e.g. squid or mussels. The recipe is suitable for 4-6 people.

2 red onions, in strips

1 carrot in sticks

1 parsley root in cubes

3 cloves garlic, finely chopped

1 cm finely chopped ginger

1 teaspoon malt lemongrass

2 teaspoons sesame oil

1 ss fishsauce

1 box of tomatoes (preferably Mutti)

2 tsp soy sauce

1 tablespoon fish stock

2 tbsp sweet chili sauce

6 dl water

1/2 finely chopped chili

400 g diced salmon

200 g cubed catfish

200 g Argentinian wild prawns

2 tablespoons coriander from a tube or 1 fist fresh, finely chopped

1 spring onion in spells

1 bell pepper in sticks

Salt and pepper

Saute onions and garlic in oil. Add carrot, parsley root, ginger, lemongrass, fishsauce, sesame oil, tomatoes, fond, chili, chilisauce, coriander, soy sauce and water. Simmer for 10 min, before seasoning with salt and pepper. Add the fish and spring onions and let it steep for 5 min, before adding the peppers and the shrimp and letting them enjoy themselves for a minute or two. Serve Thai fish stew with rice or noodles.
