Tuna with creamy caper sauce

Tuna with creamy caper sauce is one of my favorite tuna dishes. The sauce goes very well with most other types of fish too, so I recommend trying it with both red and white fish.

Sauce:

2 ss olivenolje

2 ss smør

4 ss fiskefond (ev. buljongterning)

2 løk, finhakket

3 fedd hvitløk, finhakket

2 dl hvitvin

Slightly freshly squeezed lemon juice

1/2 ltr. fløte

2 ss finhakket persille

4 ss kapers

Saute the onion in butter and oil in a pan until the onion is transparent. Add the minced garlic and saute for a further 1 minute, stirring. Add white wine and stock and cook until the liquid is reduced by half.

Stir in the cream and let it cook until the sauce thickens, stirring occasionally. Season with lemon and stir in parsley and capers.

The fish:

800 g tunfisk (4 biffer)

Salt and freshly ground black pepper

Grease the tuna steaks with olive oil and season them with salt and pepper. Grill or fry for 2 min. on each side.

Serve tuna with creamy caper sauce with potatoes of your choice, for example oven-baked and e.g. beans or other vegetables you fancy. It tastes good with some fresh dill and a squeeze of lemon.
