Shrimp cocktail as in Thailand

This delicious shrimp cocktail tastes lovely and is Thai-inspired. It tastes best with fresh shrimp, but you can of course also use frozen.

1 mango in small cubes

The juice of the remains around the mango stone

1/2 cucumber into small cubes

1/2 finely chopped spring onion

1 finely chopped red pepper

1 finely chopped chili

2 teaspoons sesame oil

The juice of 1/2 lime

1/2 pot finely chopped coriander

1/2 kg fresh shrimp, peeled (weight is before peeling)

1 tablespoon roasted sesame seeds

Mix everything except the prawns and sesame seeds. Let it soak for half an hour. Stir in the prawns, sprinkle with sesame seeds, garnish with a coriander leaf and serve with crispy biscuits.
