Spinach soup is a traditional soup in many parts of the world. The most common accompaniment is boiled egg, which is divided in half and placed on top.
1 onion, finely chopped
1 tbsp olive oil
400 g frozen spinach
8 dl water
5 tablespoons vegetable fund, possibly vegetable broth
1/2 finely sliced leek
1 dl crème fraîche
Salt and pepper
Saute the onion in the oil for a few minutes, until it is shiny and transparent. Add the spinach and let it sizzle for a few more minutes. Add water, funds and leeks. Let it boil for about 5 minutes. Add the crème fraîche and grind everything to a smooth mass with a hand blender. Season with salt and pepper.
